Bedding and shredded paper

Hi.

I purchased a kids worm farm kit from you. In the instructions for days 4-14, you say to add fresh bedding with each feeding. What do I use for bedding? Also, how much shredded paper do I use and what is the purpose of it? Does it simply supply moisture to the environment? Do I have to change it out to avoid mold growth?
